  • 3 cups cooked chicken shredded or diced (rotisserie works well)
  • 4 large flour tortillas burrito size, 10-12 inch
  • 3 cups romaine lettuce chopped
  • 1/2 cup creamy Caesar dressing plus more if desired
  • 1/2 cup Parmesan cheese freshly shredded or shaved
  • 1/3 cup croutons coarsely crushed
  • Freshly ground black pepper to taste

Method
 

  1. Combine the cooked chicken, chopped romaine lettuce, crushed croutons, and shredded Parmesan cheese in a large bowl.
  2. Pour the Caesar dressing over the mixture and toss gently until evenly coated, then season with black pepper to taste.
  3. Heat the tortillas in a dry skillet over medium heat for 15-20 seconds per side or in the microwave for 20 seconds until pliable.
  4. Place a warm tortilla on a flat surface and spoon approximately one-fourth of the chicken Caesar mixture onto the center.
  5. Fold in the sides of the tortilla, roll it up tightly from the bottom, slice in half, and serve immediately.
