Chicken

Method
 

  1. Combine all Caesar dressing ingredients in a bowl and mix until smooth and creamy.
  2. Toss the chopped romaine lettuce with 4-5 tablespoons of the dressing in a medium bowl. Cover the salad and the remaining dressing separately and refrigerate until needed.
  3. Place chicken cutlets on a cutting board and pound gently with a meat mallet or rolling pin to ensure even thickness. Season both sides with salt and black pepper.
  4. Prepare a breading station with three shallow plates: mix flour, salt, and smoked paprika in the first; whisk eggs with salt in the second; and combine both types of breadcrumbs, parsley, black pepper, salt, oregano, garlic powder, and Parmesan in the third.
  5. Heat oil in a frying pan over medium heat. Dredge each chicken cutlet in the flour mixture, dip into the egg, and coat thoroughly with the breadcrumb mixture.
  6. Carefully place the chicken in the hot oil and fry for 4-5 minutes per side until golden brown and cooked through. Transfer to a wire rack to drain, frying in batches to avoid overcrowding the pan.
  7. Slice baguettes into 5-inch portions and split them lengthwise. Spread a layer of reserved dressing on the bread, add a chicken cutlet, top with the Caesar salad, and sprinkle with extra Parmesan.
  8. Close the sandwiches and serve immediately with a side of fries.
