Method
- Heat oil in a skillet. Add chicken, season with salt and pepper, and cook until done.
- In a small bowl or measuring cup, whisk together honey, lemon juice, lemon zest, ginger, soy sauce, apple cider vinegar, and cornstarch. Pour the sauce over the chicken and cook over medium heat until thickened.
- Remove from heat.
- Serve immediately, or cool and transfer to meal prep containers. Store in the fridge for up to 4 days.
