Ingredients
  

  • 2 tablespoons olive oil
  • 2 lbs boneless skinless chicken breast cut into bite size pieces
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup honey
  • 4 Tablespoons lemon juice
  • zest of 1 lemon
  • 1 and ½ tsp ground ginger
  • 2 Tablespoons soy sauce
  • 2 Tablespoons apple cider vinegar
  • 2 teaspoons cornstarch

Method
 

  1. Heat oil in a skillet. Add chicken, season with salt and pepper, and cook until done.
  2. In a small bowl or measuring cup, whisk together honey, lemon juice, lemon zest, ginger, soy sauce, apple cider vinegar, and cornstarch. Pour the sauce over the chicken and cook over medium heat until thickened.
  3. Remove from heat.
  4. Serve immediately, or cool and transfer to meal prep containers. Store in the fridge for up to 4 days.
