- Season the chuck roast generously with salt and pepper and let it rest at room temperature for 30 minutes.
- Heat oil in a large skillet over medium-high heat and sear the seasoned roast for 2 to 3 minutes on each side.
- Add the diced onion, green chiles, minced garlic, lime juice, apple cider vinegar, brown sugar, and spices to the slow cooker.
- Pour in the beer or beef broth and stir until well combined.
- Cover the slow cooker and cook on low for 6 hours or high for 4 hours.
- Shred the beef with two forks directly in the slow cooker and mix it thoroughly with the braising liquid.
- Serve the beef barbacoa in bowls or warm tortillas with rice, beans, guacamole, and fresh salsa.
