For the Beef Filling
- Heat a skillet over medium-high heat and add the ground beef. Cook for 5–6 minutes, stirring occasionally, until the meat is no longer pink.
- Add the chopped onion, minced garlic, chili powder, cumin, salt, and pepper. Cook for 3–4 minutes until the onions are translucent and the mixture is fragrant.
For the Assembly
- Preheat the oven to 375°F and place a baking sheet or ovenproof skillet on the rack to heat.
- Arrange a single layer of tortilla chips evenly on the heated baking sheet or skillet, ensuring they do not overlap excessively.
- Sprinkle the shredded cheddar and Monterey Jack cheeses generously over the chips.
- Bake at 375°F for 8–10 minutes until the cheese is melted and the edges of the chips are golden brown.
For the Toppings
- Remove the nachos from the oven, top with dollops of fresh salsa and sour cream, and garnish with jalapeños and cilantro. Serve immediately.
