Ingredients
  

  • 2 eieren liefst op kamertemperatuur
  • 25 g kristalsuiker
  • 1 zakje vanillesuiker optioneel
  • 60 ml zonnebloemolie
  • 240 ml melk liefst op kamertemperatuur
  • 230 g tarwebloem
  • 9 g bakpoeder

Method
 

  1. Whisk the eggs in a large bowl and add the granulated sugar and vanilla sugar. Mix until the mixture lightens in color. Pour in the sunflower oil and milk, stir well, and add a pinch of salt.
  2. Sift the flour and baking powder into a separate bowl. Gradually add the dry ingredients to the wet mixture and mix briefly until smooth, taking care not to overmix.
  3. Cover the batter and let it rest for 5 minutes.
  4. Heat a skillet over medium heat and lightly grease with oil or butter. Ladle the batter into the pan and cook for 2-3 minutes per side until bubbles form. Flip carefully and cook for another 1-2 minutes until golden brown.
  5. Stack the pancakes and serve immediately with maple syrup, fresh fruit, powdered sugar, or a pat of butter.
