Marinate the Chicken
- Combine olive oil, lemon juice, lemon zest, minced garlic, paprika, garlic pepper, all-purpose seasoning, onion powder, Italian seasoning, and salt in a large bowl. Add the chicken pieces and toss to coat thoroughly. Cover and marinate for at least 30 minutes or up to 4 hours.
Prepare the Pan
- Preheat the oven to 400°F (200°C). Arrange lemon slices, onions, and bell peppers in an even layer in a large baking dish. Pour the chicken stock into the bottom of the dish.
Assemble and Bake
- Place the marinated chicken pieces on top of the lemon and vegetable layer. Cover the pan tightly with aluminum foil and bake for 45 minutes.

- Remove the foil and set the oven to broil. Broil for 5 to 10 minutes until the chicken skin is golden brown and crisp.
