Ingredients
  

  • 1 pound (450 g) ground turkey 85/15 or 93/7
  • 1 large egg
  • 1/2 cup (120 ml) Italian breadcrumbs
  • 1/4 cup (60 ml) grated parmesan cheese
  • 1/4 cup (60 ml) chopped Italian parsley
  • 2 tablespoons (30 ml) water
  • 1 tablespoon (15 ml) Napa Valley olive oil
  • 1 tablespoon (15 ml) minced garlic
  • 2 teaspoons (10 ml) onion powder
  • 1 teaspoon (5 ml) kosher salt
  • 1/2 teaspoon (2.5 ml) black pepper

Method
 

  1. Lightly coat the air fryer basket with cooking spray or a small amount of oil to prevent sticking.
  2. Combine the ground turkey, egg, breadcrumbs, Parmesan, parsley, water, olive oil, garlic, onion powder, salt, and pepper in a large bowl. Mix gently until just combined, taking care not to overwork the meat.
  3. Shape the mixture into 12 uniform meatballs using a cookie scoop or your hands to ensure even cooking.
  4. Preheat the air fryer to 375°F (190°C). Arrange the meatballs in a single layer in the basket, leaving space for air circulation. Cook for 16–18 minutes, turning halfway through, until golden brown and the internal temperature reaches 165°F (74°C).
  5. Serve the meatballs warm with your preferred sauce or as a topping for pasta, salads, or sandwiches.

Texture Secret: I have learned that turkey meat can get quite tough if you overhandle it, so I always mix the ingredients just until they come together to keep these meatballs tender and juicy
