Ingredients
  

  • 4 cups chopped cooked rotisserie chicken breast
  • ½ teaspoon onion powder
  • 4 tablespoons lemon juice (~2 lemons juice & zest)
  • ½ cup mayonnaise
  • 2 tablespoons fresh herbs, minced ***
  • ½ cup sliced almonds, optional
  • salt and pepper to taste

Method
 

  1. Mix the lemon juice, zest, mayonnaise, herbs, salt, and pepper.
  2. Toss with the cooked chicken.
  3. If using, top with sliced almonds.
  4. Refrigerate for an hour for best taste, or serve immediately.
  5. Use your preferred fresh herbs, such as tarragon, chives, basil, and thyme.
