Ingredients
  

For the Meatballs
  • 1 lb Ground beef
  • 1/2 cup Breadcrumbs
  • 1/4 cup Grated Parmesan cheese
  • 2 cloves Garlic, minced
  • 1/2 tsp Onion powder
  • 1/2 tsp Paprika
  • 1/2 tsp Cayenne pepper Adjust for spice preference
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 Egg, beaten
  • 2 tbsp Fresh parsley, chopped
For the Rice
  • 1 cup Jasmine rice
  • 2 cups Water
  • 1/2 tsp Salt
For the Smoky Chili Garlic Sauce
  • 1/4 cup Chili paste
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 2 cloves Garlic, minced
  • 1 tsp Smoked paprika
  • 1 tbsp Lime juice
  • 1 tbsp Water To adjust consistency
Toppings
  • to taste Fresh cilantro, chopped
  • to taste Lime wedges
  • to taste Sliced green onions
  • to taste Sesame seeds (optional)

Method
 

Instructions
  1. Rinse jasmine rice under cold water until clear. Combine rinsed rice, water, and salt in a medium saucepan. Bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until fluffy and water is absorbed. Remove from heat and let sit covered for 5 minutes.
  2. Combine ground beef, breadcrumbs, Parmesan cheese, minced garlic, onion powder, paprika, cayenne pepper, salt, black pepper, beaten egg, and parsley in a large mixing bowl. Mix until just combined. Form the mixture into small, 1-inch diameter meatballs. Preheat a large skillet over medium heat and add oil. Add meatballs in batches and cook for 6-8 minutes until browned and cooked through. Remove and set aside.
  3. Whisk together chili paste, soy sauce, honey, minced garlic, smoked paprika, lime juice, and water in a small bowl until smooth. Adjust consistency with additional water if needed.
  4. Fluff the cooked rice with a fork and divide among serving bowls. Top with meatballs and drizzle generously with the smoky chili garlic sauce. Garnish with fresh cilantro, lime wedges, sliced green onions, and sesame seeds if desired.
