Ingredients
  

  • 2 slices garlic bread
  • 1 cup cooked chicken shredded
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Combine the shredded chicken with mayonnaise, Dijon mustard, salt, and pepper in a mixing bowl. Mix until well blended.
  2. Spread the chicken mixture onto one slice of garlic bread. Top with both mozzarella and Parmesan cheese, then place the second slice of garlic bread on top.
  3. Heat a non-stick skillet over medium heat. Grill the sandwich for 4–5 minutes per side until golden brown and the cheese melts.
  4. Remove from heat. Cut in half if desired, and enjoy warm.
