Ingredients
  

  • 1 can tuna, albacore (I like Wild Planet brand)
  • 1 teaspoon coconut aminos (Can use gluten-free tamari soy sauce of choice)
  • 1 large cucumber, English
  • 1 tablespoon mayonnaise
  • 2 teaspoons Sriracha hot chili sauce (Can substitute with your favorite hot sauce of choice), divided teaspoons
  • 1 pinch black pepper, ground
  • ¼ cup cauliflower rice (Cooked and prepared in advance)
Optional Toppings:
  • sesame seeds (Toasted)
  • seaweed sheets (Crumbled)
  • avocado (Sliced)

Method
 

  1. Mix the mayonnaise and 1 teaspoon Sriacha. Set spicy mayo aside.
  2. In a mixing bowl, combine tuna, tamari, pepper, and Sriacha.
  3. Cut the cucumbers lengthwise in half. Scoop out the seeds and some of the middle. Spread rice evenly over the cucumber. top with tuna mixture. Top with spicy mayo,
  4. Serve topped with optional toppings like sesame seeds, avocado, and seaweed sheets.
