  • 1 1/2 pounds (675 g) boneless skinless chicken strips
  • 8 corn tortillas
  • fresh vegetables corn, California Hass avocado, red bell pepper, red onion, grape tomatoes, jalapenos
  • toppings salsa, sour cream, fresh cilantro

Method
 

  1. Cook the rice in a rice cooker according to the package instructions, then stir in lime juice, cilantro, and salt.
  2. Mix olive oil and spices in a bowl and marinate the chicken strips for 15 minutes.
  3. Grill the marinated chicken over medium-high heat for 6 to 7 minutes per side until it is cooked through.
  4. Grill the sweet corn alongside the chicken until charred, and dice the bell pepper and onion while the food grills.
  5. Assemble the bowls by layering the rice, grilled chicken, vegetables, corn, avocado, jalapenos, salsa, sour cream, and cilantro.
