Method
- Wash the sweet potatoes and pierce them with a knife.
- Bake at 400 degrees until soft (approximately one hour).
- Cut the potatoes in half and loosen the flesh of each half with a fork.
- Top with chicken, black beans, avocado, chives, and lime juice.
- Serve immediately.

Ingredient Swap: I've found that if I don't have shredded chicken on hand, seasoned ground turkey or even a hearty scoop of extra black beans with some sautéed peppers makes a fantastic filling
