Ingredients
  

  • 1 batch honey mustard sauce see below
  • 2 pounds (900 g) side of salmon boneless and skinless
  • 1 tablespoon (15 ml) fresh parsley leaves finely-chopped
  • 1/3 cup (80 ml) whole grain mustard
  • 1/4 cup (60 ml) honey
  • 4 cloves garlic peeled and minced
  • 2 tablespoons (30 ml) fresh Meyer lemon juice
  • 1/4 teaspoon (1.25 ml) smoked paprika
  • 1/4 teaspoon (1.25 ml) Kosher salt
  • 1/8 teaspoon (0.6 ml) black pepper

Method
 

To Make The Honey Mustard Salmon In Foil:
  1. Preheat the oven to 375°F or heat a grill to medium.
  2. Prepare the honey mustard sauce according to the instructions provided below.
  3. Line a large baking sheet with aluminum foil, mist with cooking spray, and place the salmon in the center of the foil.
  4. Spoon the honey mustard sauce over the salmon and spread it evenly to cover the surface.
  5. Fold the foil over the salmon to seal it completely, adding a second sheet if necessary to create a closed packet.
  6. Bake for 14–15 minutes until nearly cooked through, then remove from the oven and carefully open the foil to expose the fish. Switch the oven to broil and cook for 2–3 minutes, watching closely to prevent the sauce from burning.
  7. Transfer the salmon packet to the grill and cook for 12–14 minutes until nearly done. Carefully open the foil to expose the fish and continue grilling for 3–4 minutes until fully cooked.
  8. Remove the salmon from the heat, garnish with fresh parsley, and serve immediately.
  9. Whisk all ingredients together in a small bowl until thoroughly combined.

Flavor Variations: I love using Dijon if I want a sharper kick, but whole grain gives that wonderful texture I crave, and if you are out of honey, maple syrup is a fantastic
