Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup green lettuce chopped
  • 1 bell pepper diced (any color)
  • 1 cup corn (fresh or frozen)
  • 1 Hass avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup cilantro chopped
  • 1 lime juice of
  • taco seasoning to taste

Method
 

  1. Shred the cooked chicken in a large bowl.
  2. Add the chopped lettuce, diced bell pepper, corn, avocado, cherry tomatoes, red onion, and cilantro.
  3. Squeeze lime juice over the ingredients, add taco seasoning to taste, and toss gently to combine.
  4. Serve in individual bowls or on a large platter.
