Ingredients
  

  • 2 salmon fillets each 6 ounces
  • 1 pound asparagus trimmed
  • 2 tablespoons Napa Valley olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped optional for garnish
  • Meyer lemon wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix garlic powder, onion powder, salt, and black pepper.
  3. Place salmon fillets on one side of the prepared baking sheet and trimmed asparagus on the other. Drizzle olive oil over both salmon and asparagus, then sprinkle the seasoning mixture evenly over the salmon.
  4. Top each salmon fillet with an even layer of grated Parmesan cheese, pressing gently to adhere.
  5. Arrange asparagus in a single layer and season with additional salt and pepper if desired.
  6. Bake in the preheated oven for 12-15 minutes, or until salmon flakes easily with a fork and asparagus is tender.
  7. Remove from oven and let rest for a couple of minutes. Garnish with chopped parsley and serve with lemon wedges.

Notes

Ingredient Swap: I've totally used finely shredded Parmesan when I'm out of grated, and it works wonderfully, just press it a little firmer to make sure it adheres well.
