Ingredients

  • 2 teaspoons Vegetable Oil
  • lbs Ground Beef or Ground Turkey, 90% lean is best
  • 7 cloves Garlic (or 1 Tbsp pressed garlic)
  • cup Soy Sauce, low sodium
  • ½ cup Water
  • 3 Tablespoons Brown Sugar
  • 1 Tablespoon Sesame Oil
  • 1 Tablespoon Fresh Ginger, grated (or 1 tsp powdered ginger)
  • ½ Asian Pear, grated (optional)
  • ¾ teaspoon Red Pepper Flakes (or more for some spice)
  • ½ teaspoon White Pepper (or black)
For the Rice - I use a 7" x 2.5" pan
  • cups Jasmine Rice, well rinsed
  • cups Water
  • 2 Tablespoons Butter
To Serve
  • Tortillas (for tacos)
  • Lettuce Leaves (for lettuce wraps)
Garnish
  • 2 Green Onions, sliced
  • Sesame Seeds

Method

  1. Gather and measure all ingredients, and prepare the rice in the pan.
  2. Activate the Sauté setting, add oil and ground beef once hot, and cook until browned, draining excess fat if necessary.
  3. Stir in garlic, soy sauce, water, brown sugar, sesame oil, ginger, optional Asian pear, red pepper flakes, and white pepper, ensuring the bottom of the pot is scraped clean.
  4. Turn off the Sauté setting.
  5. Place the trivet in the pot directly over the beef.
  6. Combine rice, water, and butter in the pan and set it on top of the trivet.
  7. Close the lid and turn the steam release knob to the Sealing position.
  8. Select Pressure Cook or Manual mode and set the timer for 4 minutes on High Pressure.
  9. Allow the pressure to release naturally for 10 minutes after the cycle ends, then turn the knob to the Venting position to release remaining steam.
  10. Open the lid once the pin drops, carefully remove the rice pan using heat-resistant mitts or a gripper, and fluff the rice with a fork.
  11. Remove the trivet and stir the beef.
  12. Serve the beef over rice, in lettuce leaves, or in taco shells, then garnish and enjoy.
