Ingredients
  

  • 1 cup cabbage, chopped
  • 1 cup yellow onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 green pepper, chopped
  • 4 cups water
  • 29 oz. petite diced tomatoes (don't drain the liquid)
  • 4 beef bouillon cubes
  • Salt and pepper, to taste

Method
 

  1. Add water, cabbage, onions, celery, and green pepper to a Dutch oven. Bring to a boil, reduce heat to medium, cover, and cook for 10 minutes.
  2. Stir in the petite diced tomatoes and beef bouillon cubes. Simmer the soup, cover, and cook for 5 minutes. Taste and season with salt and pepper as needed.

Notes

Ingredient Swap: I often use vegetable bouillon instead of beef for a lighter flavor, and it works just as well.
Storage Tip: This soup keeps beautifully in the fridge for up to five days, and I find the flavors actually improve overnight.

Ahead Advice: You can chop all the vegetables a day in advance and store them together in a container in the fridge to speed up dinner.
