This pumpkin pie greek yogurt parfait is a quick, healthy fall breakfast. Spiced pumpkin and granola make it a sweet seasonal treat.

Ingredients
  

  • 1/2 cup pumpkin puree exact amount depends on the size of your parfait glass
  • 1/2 cup yogurt (Greek yogurt works especially well here)
  • 2 Tbsp. pecans, chopped or granola
  • 1/2 tsp. cinnamon
  • 1/8 tsp. ground cloves
  • 1 tsp. honey Optional- to taste

Method
 

  1. Combine the pumpkin, pumpkin spices, and half of the honey to taste.
  2. Fill a parfait glass slightly less than one-quarter full with approximately half of the pumpkin puree mixture.
  3. Toast the pecans if using, then sprinkle a thin layer of pecans or granola over the pumpkin puree.
  4. Mix the yogurt with the remaining honey to taste.
  5. Layer the yogurt over the pecans or granola, followed by a thin layer of pecans or granola and the remaining pumpkin puree.
  6. Top with a dollop of yogurt and garnish with additional pecans or granola.
  7. Serve and enjoy.

Notes

Yogurt Choice: I love using Greek yogurt for its thick texture, but I have found that a plain whole milk yogurt offers a silky smoothness that pairs perfectly with the pumpkin.
