Heat olive oil in a skillet over medium-high heat. Add the chicken and season with salt and pepper. Sauté for 5 to 7 minutes, stirring frequently, until the chicken is just cooked through.
Place the chicken on a plate lined with paper towels.
Add butter and onions to the pan. Sauté for three minutes.
Add the cabbage to the pan. Cook uncovered for 10 to 15 minutes, stirring frequently, until the cabbage is soft and reaches your desired tenderness. After a few minutes, the cabbage at the bottom will wilt, making it easier to stir. The onions will begin to brown lightly and develop more flavor.
Add the garlic and paprika and stir to combine.
Return the chicken to the pan and cook, stirring frequently, until heated through. This will take just a few minutes.
Taste and season generously with salt and pepper. Serve immediately.
