Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 Meyer lemons juiced
  • 3 tablespoons Napa Valley olive oil
  • 2 garlic cloves minced
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh rosemary chopped
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 1/2 cups chicken broth
  • 2 tablespoons fresh parsley chopped

Method
 

  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  2. Place chicken breasts in a ziplock bag, pour the marinade over them, and seal the bag. Marinate the chicken in the refrigerator for at least 1 hour.
  3. Preheat a grill to medium-high heat. Remove the chicken from the marinade and discard the excess.
  4. Grill the chicken for 6-8 minutes per side, or until its internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before serving.
  5. While the chicken grills, prepare couscous according to package instructions, using chicken broth instead of water. Fluff the couscous with a fork and stir in fresh parsley.
  6. Serve the grilled chicken with the couscous.

Ingredient Swap: I totally get it if Meyer lemons aren't around, they can be elusive.
Regular lemons work beautifully here, just maybe dial back the juice ever so slightly if you
