- Preheat your oven and prepare a baking sheet.
- Slice the cauliflower heads into thick, steak-like pieces.
- Coat both sides of each cauliflower steak with olive oil, then season with salt and pepper.
- Roast the cauliflower in the oven until it becomes tender and golden brown.
- Sauté the shallots and garlic in a pan until they turn translucent.
- Stir the baby spinach, dill, and parsley into the pan and cook until the spinach wilts.
- Remove the pan from the heat and fold in the ricotta, feta, and smoked Cheddar.
- Top the roasted cauliflower steaks with the spinach mixture.
- Place the steaks back in the oven and bake until the cheese is melted.
