Caramel Sauce
  • 1 cup granulated sugar
  • 1/4 cup water
  • 3/4 tsp Morton Fine Sea Salt
  • 1/4 cup unsalted butter
  • 2/3 cup heavy cream
  • 2 pinches Morton Coarse Sea Salt for topping
Frosting Ingredients
  • 3/4 cup unsalted butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans or walnuts optional
  • 2 pieces bananas diced, optional
  • 1/2 cup semi-sweet chocolate shavings optional

Method
 

Making the Caramel
  1. Combine granulated sugar and water in a saucepan and cook until the sugar dissolves and turns light amber.
  2. Add Morton Fine Sea Salt and diced unsalted butter to the mixture and stir until the butter melts.
  3. Remove from heat, carefully stir in the heavy cream until smooth, and allow the mixture to cool.
Making the Frosting and Assembling the Cake
  1. Combine the cooled caramel sauce, unsalted butter, powdered sugar, and vanilla extract in a mixing bowl and mix until creamy.
  2. Fold the diced bananas, chopped nuts, and chocolate shavings into the frosting mixture, if desired.
  3. Frost the cake generously and sprinkle with additional coarse sea salt.
