- Place chicken breasts in the bottom of a crockpot. Season with salt, pepper, Italian seasoning, minced garlic, and onion.
- Pour marinara sauce over the chicken.
- Cook on low for 5-7 hours or on high for 2.5-3 hours, until the chicken reaches an internal temperature of 165°F.
- Stir in the sliced zucchini. Cover and cook on high for 60 minutes, until the zucchini is tender.
- Top the meal with shredded Parmesan cheese. Cover and cook on low until the cheese melts.
- Serve and enjoy the chicken.

Ingredient Swap: I've often used boneless, skinless chicken thighs instead of breasts here, especially when I want a richer, more forgiving meat.
