Ingredients
  

  • 16 1/4 oz white cake mix
  • 3 eggs
  • ¾ cup ripe mashed bananas
  • ¼ cup vegetable oil
  • ¼ cup water
  • 1 teaspoon banana flavoring optional see note one
Frosting
  • 3 cups cream cheese buttercream or use store-bought
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat oven to 350°F. Line two 12-cup muffin pans with 24 cupcake liners and set aside.
  2. Combine all ingredients in a large bowl. Mix for 30 seconds, then beat for two minutes.
  3. Distribute the batter evenly among the 24 muffin cups.
  4. Bake at 350°F for 15 to 19 minutes until a toothpick inserted in the center comes out clean. Transfer cupcakes to a wire rack to cool completely.
  5. Pipe cream cheese buttercream onto the cupcakes using a closed star tip and finish with a sprinkle of ground cinnamon.
