Ingredients
  

  • 1/4 cup cottage cheese
  • 1 scoop chocolate protein powder
  • 2 tbsp cocoa powder (or cacao powder)
  • 1 tbsp maple syrup
  • 1 pinch sea salt
  • 1 splash vanilla extract
  • 1/4 tsp baking powder
  • 1 tbsp almond milk (any dairy free or regular milk)
  • chocolate chips (add what you like!)

Method
 

  1. Add all ingredients except for the almond mik to a microwave-safe dish and stir.
  2. Slowly add and stir in almond milk until a very thick batter consistency is achieved.
  3. Microwave for 1 minute.
  4. Cool slightly and enjoy. Optionally, drizzle with chocolate, coconut cream, or ice cream.

Ingredient Substitution: I've found that using full-fat cottage cheese gives this brownie an unbelievably moist and rich texture, though low-fat works just fine if that's what I have on hand
