Method
- Prep the chicken. In a shallow bowl, combine almond flour, salt, and crushed chips.
- In a separate bowl, whisk together lime juice and egg.
- Dip each chicken piece into the egg mixture first, then into the flour/chip mixture. Place all chicken pieces in a single layer in the air fryer, cooking in batches if necessary.
- Set the air fryer to 380°F and cook for 8-10 minutes, or until the chicken is cooked through. Flip each chicken piece, and cook for an additional 6-8 minutes, or until crispy.
- While the chicken cooks, make the sauce. In a small bowl, whisk together mayonnaise, chili garlic sauce, honey, and rice vinegar.
- Once the chicken is done, place it on a large plate and drizzle with sauce. Alternatively, use the sauce for dipping.
For the oven:
- Preheat the oven to 450°F while preparing the chicken. Lightly grease a large sheet pan. Place each chicken piece on the sheet pan and bake for 12 minutes. Flip the chicken, and bake for another 10-12 minutes.

***Omit the honey for Keto or Whole30. You can use a tiny amount of monk fruit sweetener for a Keto option.
