Prep Time 15 minutes
Servings: 1
Course: Dinner, lunch, Main Course
Cuisine: Mexican

Ingredients

  • 1 lb chicken cooked
  • 1 can black beans drained
  • 2 cups cooked rice (or box of Rice-a-Roni)
  • 1 cup cheddar cheese shredded
  • 1 jar salsa
Topping Options:
  • avacado or guacamole
  • lime wedge
  • cilantro
  • corn
  • sauteed pepper strips
  • onions
  • grilled zucchini
  • tortilla chips
  • sour cream

Method

  1. Distribute the chicken, rice, beans, salsa, and cheese equally among six freezer-safe containers.
  2. Add your preferred toppings to each portion.
  3. Seal the containers tightly with lids and store in the freezer for up to one month.
  4. Reheat in the microwave to serve, adjusting the time based on the temperature of the contents and the quantity of toppings.
  5. Garnish with additional toppings like avocado or sour cream once the meal is warmed through.

Notes

Moisture Control: I always add an extra spoonful of salsa over the rice before freezing because it prevents the grains from drying out during the reheating process.
Fresh Toppings: I suggest keeping the avocado and sour cream separate until you are ready to eat, as these fresh elements lose their magic if they go through the microwave.
Grain Alternatives: I have found that using brown rice or even farro adds a wonderful nutty chew that stays firm even after a few weeks in the freezer.
Cheese Quality: I highly recommend shredding your own cheese from a block because it melts into a much creamier consistency than the bagged stuff.
Flavor Boost: I love to squeeze a bit of fresh lime juice over the chicken right before I pack the bowls to keep the meat bright and tender.
Even Heating: I make sure to spread the ingredients in a relatively flat layer in the container so everything warms up at the same speed without leaving a cold center.
